Sndsampler (www.sndsampler.com) is an excellent tool for this job, unfortunately there is no OSX version at present

For sample editing, I particularly like Sound Studio 2.0 from Felt Tip Software. New version due shortly, but it's already OS X native. Cheers, Jonathan
