For I guess a few months now I've been musing over how to put together a Doggiebox drum kit (or kits) to model a Latin-style percussion section.

I think this is a cool idea. I am not a drummer and so don't really find the five-category model that natural. In fact "A huge grid providing slots for dozens of instruments" would probably much more natural to me ;-) So I'm all for a more flexible model which could provide for this. My 2 cents Frank Rubino
